This Overnight Oats Recipe Will Make You Want to Get Out Of Bed In The Mornings

We all know the health benefits of porridge oats which is why a lot of us have them most mornings for breakfast. However, although they do give us energy to start our day and keep us fuller for longer, having them every morning can sometimes get a little repetitive – that’s where this mouthwatering overnight oats recipe comes in. Not only does it taste heavenly, it also uses nutrient dense toppings, including a salted caramel topping made from tahini, a great source of calcium, and maple syrup, an excellent source of energy-promoting manganese.

 

 

Ingredients:

40g oats

1 banana

1 tbsp of flaxseed

175ml milk of choice (almond is a personal favourite)

½ tsp of vanilla extract

½ tsp of cinnamon

1 tsp tahini

1 tsp maple syrup (substitute: honey)

1 tbsp milk of choice

 

Method:

1. Cut the unpeeled banana in half. Place one half in the fridge and mash the other half using a fork.
2. Mix the flaxseed, oats, cinnamon, vanilla extract and milk in with the mashed banana.
3. Pour the mixture into a sealed jar and leave it in the fridge overnight.
4. Meanwhile, make the salted caramel topping by mixing into a small saucepan the tahini, maple syrup and milk over medium heat.
5. Bring to the the boil and take it off the heat, the consistency should be thick and syrupy.
6. When you’re ready to eat your oats, chop up the leftover banana and place on the oats along with the salted caramel topping.
7. Enjoy!
